Cherries and mint ice cream on the menu with this fresh dessert recipe to delight the taste buds of your family.

  • For 4 people :
  • 600 g of fleshy cherries
  • 250 g brown powdered sugar (vergeoise or brown sugar)
  • 1 half liter of mint ice cream
  • 1 bunch of fresh mint

In a large pan, pour the sugar with 1 half liter of water. Bring to simmering over medium heat, stirring constantly with a wooden spoon, until the sugar is completely dissolved, then let simmer until the consistency of a syrup (about twenty minutes).
Meanwhile, rinse the cherries then plant them and pit them.
Rinse the bunch of mint and dry it in a clean cloth.
Take off the fire jumper. Pour the cherries and the bouquet of mint, after having isolated a branch (for the decoration).
Stir gently, cover, let cool completely, then place in the refrigerator until use.
When serving, remove the mint. Divide the cherries into glass cups. Put on a quenelle of ice cream, molded with a tablespoon.
Decorate each with a mint leaf and serve immediately.
