Cherry verrines with amaretti

For 4 people :

  • 500 g of cherries
  • 10 amaretti cookies
  • 2 egg yolks
  • 60 g of sugar
  • 40 g of flour
  • 40 cl of milk
  • 1 vanilla pod.


Wash and dry the cherries and open them in half to remove the stones. Roughly crush the amaretti. Split the vanilla pod in half and collect the seeds. Pour the milk into a saucepan and add the vanilla seeds. Warm it up.
In a bowl, whisk the egg yolks with the sugar until the mixture whitens. Add the flour and beat and pour the milk while mixing. Transfer the mixture to the saucepan and cook for 5 minutes, continuing to whisk.
Let the cream cool. In verrines, layer layers of crushed biscuits, then cherries and pastry cream. Decorate with a whole cherry and serve.
